5 to 6 pounds (2-1/2 to 2-3kg) beef or pork ribs cut into 3 rib portions
1/2 cup (118ml) water for cooking
1/4 cup (58ml) water for sauce/glaze.
1. Begin by preparing the ribs: remove the membrane if it isn’t already removed. Slide a dull knife under the membrane and over a bone on one end. Lift and loosen until it tears. Grab the edge of the membrane with a paper towel and pull it off. If you are lucky, it comes off in 1 piece.
2. Rub the contents of the Large packet all over the ribs, wrap in plastic and refrigerate overnight.
3. When ready to cook, pour the water into the slow cooker then place the meat along with all the rub mixture (everything which has stuck to the plastic) on top. Cook for 6 to 8 hours on low until it falls apart.
4. Remove 1/2 cup (118ml) of the juice from the bottom of your slow cooker and add the 1/4 cup (58ml) water and the contents of the Small Packet. Cook this mixture in a saucepan over medium heat until it becomes bubbly and starts to thicken. Add more water if it gets too thick. Serve over ribs as a sauce/glaze.
