A carb smart meal. Serves 4

YOU WILL NEED:  

  • 1 ½ to pound boneless, skinless chicken breast cut into strips or cubes 

  • 1 tablespoon olive oil 

  • 1 cups water 

  • 1//2 onion, diced 

  • 1 can (14 1/2oz) can diced and drained tomatoes 

  • Optional side dish: corn on the cobb. You can also add in 1 cup frozen corn into your sassy chicken skillet 

For the slaw : 1 bag of cabbage/coleslaw mix + 2 tablespoons vegetable oil and 1/3 cup mayonnaise. For a non-creamy dressing substitute the mayonnaise for 1/3 cup water and 1 tablespoon apple cider vinegar (or white vinegar)) 

 

DIRECTIONS: 

  1. Remove clear bag.  Empty coleslaw mix into a medium sized bowl along with the contents of your clear pouch.  Mix in your wet additions (see the “you will need” section for a creamy slaw and a non creamy slaw variation).  Mix everything together until combined and then refrigerate your bowl of slaw until dinner is ready to serve. Toss again right before serving 

  1. In a large heavy bottom skillet, add oil. Heat skillet to medium high heat and add chicken once your skillet is hot. Sauté chicken until it is no longer pink, about 6 minutes.   

  1. Empty contents of your pouch into your skillet and give it a good stir with your chicken. Stir in broth, tomatoes, onion and any additional vegetables.  

  1. Bring mixture to a boil, stirring occasionally. Reduce heat and cover. Simmer about 20 minutes to allow flavors to combine.   

  1. Serve chicken with slaw 

 

For a higher carb meal, serve alongside rice or pasta.  

Tips and tricks!

 

  • I had an "aww man" moment right when I went to make dinner and realized I never bought cabbage. So I dug into my fridge and turned the sassy slaw into a sassy broccoli slaw by adding- 1 small head broccoli, tops cut into tiny pieces, half an onion, an apple diced, a half a pepper diced and a few cranberries. Followed the slaw directions and used the same wet additions. Refrigerated an hour before serving as I made it up ahead before I worked out and made dinner.
  • The mix is versatile. I didn't have corn, so I added another mixed bag of veggies along with fresh baby tomatoes to blister and cook.
  • I didn't add all the liquid as called for because I used frozen veg and that has a certain amount of liquid as it thaws in the pan, so I added a quartet cup of water at a time and blended until there was just some water at the bottom that evaporated as the dish simmered. As the meal simmers, the liquid condenses leaving a nice coating.
  • Make it a higher carb dish or extend it to feed additional servings and toss in 2 cups freshly cooked pasta into your chicken mix and toss to coat.
