Saint Paddy's Day Chocolate Mint Brownies

YOU WILL NEED

•          3 large eggs (lightly beaten)
•          1/2 cup (12mL) butter (softened)
•          ¼ cup soft butter & 1 – 2 tsp water (for mint frosting)
•          1 teaspoon melted butter (for chocolate top)

DIRECTIONS

1.     Preheat oven to 350°F (177°C )
2.     Make your Brownies : In a medium bowl, add the butter and beat on medium speed until light and fluffy.  Add in your eggs, one at a time and beat after each addition
3.     Empty the contents of the large bag included in your package into the bowl.  Using a spoon, mix until just blended.  Don’t over mix. 
4.     Spread the batter into a lightly greased or parchment lined 9”x9” pan. 
5.     Bake for 30 minutes or until toothpick inserted into the center comes out clean.
6.     Remove from the oven and COOL completely to room temperature.  Refrigerate at least an hour before adding the middle layer
7.     Make Your Filling : In a medium bowl cream ¼ cup soft butter.  Add contents of your medium bag to your butter and beat on medium speed.  Add ½ teaspoon water at a time until your frosting is blended and just thick enough to spread.  Remove your brownies from the fridge and frost.  Return to fridge for another hour before you top with your Chocolate Top
8.     Make Your Top : Empty contents of your small bag into a microwave safe dish.  Add 1 teaspoon butter, melted and blend.  Microwave on HIGH for 15 second intervals, stirring in between each time until just blended. 
9.     Remove brownies from the fridge and working quickly spread your chocolate top on quickly into a thin layer.  Score your top with your brownie squares. Refrigerate for 20 minutes and cut.
