YOU WILL NEED

  •                    2-3/4 cup (660mL) hot water 
  •                    1/4 cup (60mL) sour cream (or additional hot water) 
  •                    1-1/2 cups (360mL) shredded cheddar cheese 
  •                    1/3 cup (80mL) bacon crumbles (optional)
  •                    3 Tbsp chopped, fresh chives (optional)

 

DIRECTIONS

  1.      Preheat oven to 375°F (190°C). 
  2.      In a large bowl, combine contents of bag with 2-3/4 cup hot water and 1/4 cup sour cream (for a slightly “less loaded” mash, feel free to substitute with the same amount of hot water).  Mix with a fork until combined.  If you like your mashed potatoes more fluid, add more water until desired consistency is reached. 
  3.      Add half (3/4 cup) of the shredded cheese to the potato mash and mix through. 
  4.      Transfer your mixture to an 8”x 8” baking dish and spread until even.  Sprinkle the remaining cheese on top. 
  5.      Bake covered for 25-30 minutes until heated through.  Broil for 1-2 minutes, uncovered, for a lightly browned, cheese-top. 

     Optional Step: Go all the way!  After baking 25-30 minutes, sprinkle potatoes with your crumbled bacon and fresh chives.  Return to the oven to broil, uncovered, for 1-2 minutes.
