These are our almost famous lemon squares! Brought back this month to celebrate all things lemon. These lemon squares feature an easy shortbread crust and a perfect lemon curd filling mix. These are the perfect balance between tangy and sweet and they make a HUGE 9x13 pan-ful! Lemon squares for days!

YOU WILL NEED

  •          12 tablespoons (170g) cold butter
  •          4 large eggs
  •          4 tablespoons (60ml) lemon juice
  •          9”x12” (22cm x 30cm) or similar (greased) baking dish 

DIRECTIONS

  1.     Preheat your oven to 325°F (163°C).
  2.     Remove clear pouch from bag and set aside
  3.     Empty contents of pouch found directly inside your bag into a medium sized bowl. Cut the butter into the mixture with a pastry blender or 2 forks, until the mixture is crumbly. Press into the baking dish in an even layer.
  4.     Bake your crust for 15 to 20 minutes until lightly browned. While it is baking, make the filling.
  5.     In a separate clean bowl Beat the eggs and the lemon juice with contents of your clear unlabeled bag (removed in step 2) until smooth and light. Pour over baked crust. 
  6.     Bake at 325°F (177°C) for 25 to 30 minutes or until the top is set and golden.
  7.     Allow to cool before cutting.
  8.     Before serving, sprinkle with a little powdered sugar if desired.

 

Freeze Em! Wrap and store Lemon Squares in individual portions for perfect treats that you can pop out of the freezer and enjoy. They can last 1 month in your freezer; wrap tightly, individually in plastic wrap then place in a zip top bag.
