INSIDE the package you will find 1 small bag unlabeled (pico de gallo starter), 1 small bag labeled #1 (your taco crema). Remove both clear bags

YOU WILL NEED: PICO DE GALLO

  • 2 large tomatoes, finely diced
  • 3 tablespoons olive oil
  • 1 small onion, finely diced
  • Optional ¼ cup diced cucumber

DIRECTIONS

  1. Add all your vegetables to the bottom of a medium sized bowl along with olive oil and contents of SMALL unlabeled bag. Toss to coat. Refrigerate.

YOU WILL NEED : TACO CREMA

  • Contents found inside bag labeled #1
  • 1/2 cup sour cream

DIRECTIONS

  1. In a small bowl combine sour cream with contents found inside bag labeled #1. Stir well and refrigerate

YOU WILL NEED – BBQ CAULIFLOWER TACOS

  • 1 medium head cauliflower (about 2 pounds whole)
  • 1 tablespoon nut butter of choice
  • 1 tablespoon maple syrup, honey or agave
  • 2 tablespoons soy sauce (or tamari or coconut aminos)
  • 6 to 8 flour tortillas
  • ¼ cup melted butter
  • Other toppings of choice like shredded cabbage, matchstick carrots, chopped green onions (all optional)

DIRECTIONS

  1. Preheat oven to 400F
  2. Pour melted butter onto a large sheet pan and using a pastry brush, spread your butter evenly onto your pan. Set aside
  3. Chop the cauliflower into large florets. Place them in a large bowl
  4. In a small bowl empty contents found directly inside your pouch.
  5. In a small saucepan over medium heat, whisk together oil, nut butter, maple syrup and soy sauce until fully combined and slightly darkened – about 2 minutes. Pour sauce over the cauliflower and stir several times until cauliflower is well coated
  6. Pour about 1/3 of the dry mix from step 2 into the bowl with your cauliflower and mix well. Repeat twice more to coat all the cauliflower. Remove the cauliflower from the bowl with your hands and place it onto your prepared pan. Discard any remaining dry mix
  7. Bake cauliflower for 30 minutes, flipping the cauliflower at the 15 mark with a spatula.
  8. Remove from oven and assemble your tacos.

ASSEMBLY

Assemble your tacos. Warm your tortillas slightly, fill with your cauliflower and top with pico de gallo, shredded cheese, crema and any other toppings of choice

Remove 2 clear bags found inside your pouch – one unlabeled bag (tortilla crunch crumble), one unlabeled bag (tortilla crema starter)

DIRECTIONS: CREMA

You will need

  • ½ cup sour cream or dairy free alternative

DIRECTIONS: CREMA

Combine contents found inside small unlabeled bag (crema starter) along with your sour cream in a small bowl. Blend together. Cover bowl and refrigerate until serving

YOU WILL NEED : SOUP

  • 1 can coconut milk (or simply just 1 ½ cups water)
  • 2 ½ cups water
  • 14oz can of tomatoes (drained) – optional
  • 2 medium sweet potatoes, skin removed and cut into small diced pieces (no bigger than 1”)
  • 1 tablespoon vegetable oil

DIRECTIONS

  1. Heat a large, rimmed pot over medium heat. Add oil along with sweet potatoes. Roast your sweet potatoes on medium-high heat until they slightly brown, stirring often.
  2. Add water, tomatoes, coconut milk and contents of your package.
  3. Bring pot to a boil, stirring often.
  4. Reduce heat to low, simmer soup uncovered stirring occasionally for 15 – 20 minutes until lentils are tender. If the mixture becomes too thick, you can add additional coconut milk or water as needed to thin soup to preferences.
  5. Divide between serving bowls and garnish with your crema and top with your crunchy tortilla crisps
