YOU WILL NEED:

  •          1 ½ cups sweet potato, peeled and diced and cooked
  •          ¾ cup coconut milk, full fat (canned)

 

DIRECTIONS

  1.     Steam the sweet potato until soft (steaming or boiling retains the most moisture. We do not recommend roasting). Allow to cool to room temperature
  2.     Add coconut milk, contents found inside your pouch and the sweet potato to a high-powered blender or food processor and process until smooth.  Add an extra 2 to 4 tablespoons coconut milk if needed until the mousse is your desired consistency (it will thicken as it cools)
  3.     Scoop the mousse into a storage container and place in the fridge to cool. Serve the mousse cold, topped with fresh fruit, nuts, seeds or any other topping desired
