Creamy Combo Conqueror a creamy stuffed chicken with parmesan mashed potatoes

INSIDE the package you will find 1 small bag, unlabeled (tortilla chips), 1 small bag, unlabeled (your pico de gallo starter)

YOU WILL NEED: PICO DE GALLO

2 large tomatoes, finely diced
3 tablespoons olive oil
1 small onion, finely diced
Optional ¼ cup diced cucumber

DIRECTIONS

Add all your vegetables to the bottom of a medium sized bowl along with olive oil and contents of SMALL unlabeled bag. Toss to coat. Refrigerate.

YOU WILL NEED – RANCHERO CHICKEN QUESADILLAS

2 ½ cups cooked and shredded or finely diced chicken (a fast hack! Cut up an already cooked rotisserie chicken!)
1/3 cup green sliced onions
6 to 8 flour tortillas
¼ cup melted butter
2 cups favorite shredded cheese (we love Monterey jack)
1 cup sour cream
1 cup water

RESERVE 2 tablespoons of mixture found inside your package and set aside

DIRECTIONS

Preheat oven to 375F
In a very large skillet combine chicken, water, green onions and contents found directly inside your pouch. Cook uncovered over medium heat until warmed through, about 10 minutes stirring occasionally.
Brush one side of your tortilla with butter, placing buttered side down on a lightly greased baking sheet. Spoon ¾ cup chicken mixture over half of each tortilla, spoon a few tablespoons pico de gallo on top and a few of your crushed tortillas (found in your unlabeled clear bag) and sprinkle with 1/3 cup of cheese.
Fold plain side of tortilla over cheese. Bake 375F until crisp and golden (about 11 minutes)

Stir together reserved mixture along with your sour cream. Cut quesadilla into wedges and serve with your ranchero sour cream, extra tortilla chips and any remaining pico de gallo
