DIRECTIONS: 

As a crunchy dip:

  • 3 cups small cauliflower florets (cut in ¾ inch pieces) 

  • ½ of your dip mix (about ¼ cup) 

  • 1 cup Greek yogurt or 1 brick cream cheese 

  • ¾ cup favorite grated cheese 

  • 1 tablespoon olive oil 

  • ½ cup water 

Pre-cook your cauliflower until fork tender (either roast inside the oven on a sheet pan at 375F drizzled with olive oil for 15 to 20 minutes, turning once or bring a large pot of salted water to boil, add cauliflower and boil for 8 to 10 minutes) 

Lay cauliflower on the bottom of a greased 8x8 baking dish (greased with your olive oil). In a separate bowl add yogurt or cream cheese along with ½ package of your mix and ½ cup water. Blend on medium high speed until mixed together. Fold in ½ your shredded cheese. Pour your mixture on top of your cauliflower and sprinkle your remaining cheese on top.  Preheat oven to 400F and bake your dip for 15 to 18 minutes until cheese on top is brown 

As a Creamy Dip: Once your cauliflower is cooked, add it to a blender and blend it on HIGH until it reaches creamy consistency. Add cream cheese (or yogurt), half your dip mix and water into your blender along with the pureed cauliflower. Blend on HIGH until smooth. Pour into a lightly greased 8x8 dish. Top with all your ¾ cup of cheese and bake as directed above.
