This Chinese restaurant-style fried rice is the absolute best. It's quick and easy to make, customizable with any of your favorite mix-ins for a meal done delicious. Add tofu, chicken, beef or shrimp for a different variation every time! Serves 4 - 6

YOU WILL NEED :

  •          2 1/3 cups (550mL) water
  •          2 or 3 eggs, beaten to taste
  •          2 teaspoons (10mL) sesame oil
  •          3 tablespoons (45mL) water
  •          1 cup of favorite vegetables (we love to use simple frozen peas, corn or carrots – or a mix of all three. If using large cut vegetables, make sure to cut them into small bite-sized pieces)

DIRECTIONS

Chef Note : It is best if the rice is made the day before and allowed to rest overnight. Minimum time for rice to rest is 2 hours Preheat oven to 350F. 

  1.     Mix the contents of the Rice with the 2-1/3 (550ml) water and any vegetables of choice. Cover and bring to a boil. Turn off the heat and let it sit, covered, for 20 minutes until it is cooked through. Refrigerate (minimum 2 hours to overnight).
  2.      When ready to prepare your Chinese Fried Rice, heat your wok or very large pan over medium high heat.  
  3.      In a small bowl, beat the eggs together and set aside. 
  4.      When the wok is very hot, swirl the oil all around the sides and bottom, coating it completely.  Immediately add your egg and beat/stir quickly around the pan into small bite-sized portions with a large spoon until fully cooked
  5.      Add the rice and sprinkle on the seasoning packet with 3 tablespoons (45ml) water.  Mix together and stir fry for two minutes, moving it constantly.  Cover and let it sit for 5 minutes and serve.

Tips! Toss in a cup of precooked shrimp when you add your rice for a Yummy Shrimp Fried Rice! Have leftover cooked chicken or beef? Cube it up and toss it in for a chicken or beefy fried rice.
