Easy and Delicious Pesto Chicken Pasta

This easy pasta recipe is perfect for a quick weeknight meal.

Ingredients

1 lb favorite dried pasta

Do You Bake? Pesto Cheese ball box mix

8 oz. Cream Cheese

2 tbsp fresh chopped basil

2 tbsp Extra Virgin Olive Oil

boneless skinless chicken breasts

2/3 cup milk or cream

1 cup chopped fresh or frozen broccoli

salt and pepper to taste

Directions

1- Heat olive oil in a large sauté pan over medium-high. Season the chicken with salt and pepper on both sides and place in the pan.

2- Cover with the lid and sear for 5 minutes on one side.

3- Flip and sear 5 to 6 more minutes, or until cooked through.

4- Remove the chicken from let cool. After a few minutes, chop the chicken into bite-sized chunks.

5- Keep sauté pan on medium heat and add your cream cheese, Do You Bake? Pesto Cheese-ball mix and milk. Stir until completely combined and smooth. Simmer mixture.

6- While chicken is cooking and sauce is simmering, boil the pasta along with the broccoli (in a large pot of salted boiling water) until al dente, about 8 minutes.

7- Drain the pasta water and return the pasta to the pot.

8- Stir in your pesto sauce and chopped chicken.

9- Season with salt and black pepper to taste.

10- Toss in a few sundried tomatoes (optional) for pretty color.

11- Enjoy!

Easy Waffle Breakfast Sandwiches

Chicken and waffles move over! Try this egg and meat-filled waffle sandwich as a variation to the savory style waffle-wich!

Optional - top with lettuce

This is a perfect brunch dish to serve with guests or during your holiday season.

Ingredients

FOR THE WAFFLES:

1 Box Mix - Do You Bake? Breakfast Belgian Waffle Mix

2 eggs

3 cups of milk

6 tablespoons melted butter

FOR THE SANDWICHES:

2 to 3 slices smoked Montreal meat per sandwich

1 egg

salt, pepper to taste

butter

Directions

MAKE YOUR WAFFLES:

1- Combine milk, waffle mix, eggs, and melted butter into a large bowl. Whisk until smooth.

2- Set aside for 10 minutes

3- Cook waffles according to waffle iron manufacturer directions.

4- Place cooked waffles in a warm oven (about 200F) while you prepare the toppings

MAKE YOUR WAFFLE SANDWICHES:

1- Crack 1 egg per sandwich inside a medium skillet (lightly buttered). Cook on medium-low (with a lid on top. Pour a teaspoon of water into your skillet to allow the steam to slightly cook the yolk and cook the white.

2- Remove waffles from oven and top with a few slices of meat and a sunnyside up egg.

3- Season with salt and pepper and place top waffle on top.

4- Serve and enjoy!

You can easily substitute the Montreal Smoked meat with Pastrami or Corned Beef.  For an even sexier waffle-sandwich, saute your meat on each side for about 20 seconds and then add to your waffle.
