Quesadillas make for easy appetizers! or small weeknight bites
Ready in under 30, they are a great grab and go quick meal when you are short on time but still want something satisfying and nutritionally balanced
And no ovens required!
⭕1 tablespoon Do You Bake? Enchilada Dip and Seasoning Blend
⭕4 burrito-size tortillas
⭕8oz pepper jack or Mexican Style Cheese
⭕1 cup chopped precooked chicken breast (or pick up a rotisserie chicken and chop it up!
⭕2 tablespoons butter
⭕1/2 small head iceberg lettuce
➡️Lay out the tortillas and sprinkle cheese on top of each half.
➡️Season chicken with your Do You Bake? Seasonings and top your cheese with your chicken
➡️Fold the tortillas in half
➡️Heat 1 tablespoon butter in a large nonstick skillet over medium heat.
➡️Add 2 quesadillas at a time and cook, turning once until brown and crisp on each side and cheese is melted (about 5 to 7 minutes)
➡️Transfer to a cutting board and repeat with remaining butter and quesadillas
➡️Cut the quesadillas into wedges and serve. Add lettuce, salsa, guacamole and sour cream for dipping and saucing good fun
