So we are settling nicely into fall. The temperatures are starting to cool off (at least we think so!), the leaves will change soon and we'll be surrounded by all things pumpkin.
These are the times when we start to crave those warm aromatic and spicy pumpkin-y flavors.
Pumpkin Obsession ... Pumpkin Love ... Doesn't matter what you call it, we're totally in love with pumpkin this year.
Our latest obsession? .. Pumpkin Butter.
A delicious toast topping of your dreams. Delicious on toast, warm rolls, biscuits (mmm buttermilk biscuits even), bagels and english muffins.
So, how do you make this delicious pumpkin butter toastable?
What You Will Need :
- 1 can of real pumpkin (not pie filling, the puree style)
- 3 tablespoons brown sugar
- 1 tablespoon maple syrup (you can substitute with agave or honey)
- 1 teaspoon lemon juice
- 1 whole package Do You Bake? Pumpkin Spice Latte Mix (one single serve package)
- a tiny pinch of salt
Combine all ingredients into a saucepan or small pot and simmer at medium heat for 30 minutes. Remove from heat and cool to room temperature. Pour into a container, add the lid and refrigerate.
Will keep for up to a week in the fridge
PS: Pumpkin butter totally rocks as part of your warm bowl of oatmeal too!
